Jicama Fries

If you are anything like Mr. A, it is hard for you to eat a hamburger without the fries. So I set out to find a way to make delicious, crispy, pub-type fries … without the spud. Ho-hum. A few trial and errors later, I was still not satisfied with my “fries”. Then I read about using jicama (pronounced hic-a-ma) for a french fry. Trigger the lightbulb – Jicama Fries. So simple. So yum. Your family might even give you a round of applause.

Jicama fries are a low-calorie alternative to french fries, and pack way more healthful nutrients. An excellent source of fiber and vitamin C, jicama also provides antioxidants that can lower your risk of heart disease, as well as a range of minerals, such as iron and potassium. This versatile tuber can be served raw or cooked, and has the taste of a sweet apple. As you’ll see below, jicama fries are the delicious alternative to french fries that you’ve never heard of. But we bet you won’t forget them once you try one.

Jicama Fries
Jicama Fries are the perfect low carb alternative to french fries, steak fries, or wedges. Serve these with grilled hamburgers or chicken.

Instructions
  1. Preheat oven to 400 degrees. Peel and slice jicama into about 1/4 to 1/2 inch strips.

  2. Place strips into a microwave safe bowl. Add about 2 tbsp water to bowl then cover and microwave for about 12 minutes. Stop about half way through to stir.

  3. Remove from microwave, then toss with olive oil, season salt, and black pepper.

  4. Spread jicama fries onto baking sheet in single layer. Bake for 30-35 minutes, turning once.
