Stuffed Mini Peppers

As football season is gearing up, you might be looking for some new ‘football party’ recipes. I know I have been looking to mix it up with new options from last year. These stuffed mini peppers fit the bill and I’m so excited to share the recipe with you! You should definitely put Stuffed Mini Peppers into your Saturday rotation.

Stuffed Mini Peppers
Stuffed mini peppers can be used for a get together or for batch cooking. Since Stuffed mini peppers only take 15 minutes to prepare, it's good anytime!
Instructions
  1. Preheat oven to broil on high.
  2. Slice length-wise down the sausage, then peel the casing off. Chop fresh cilantro.

  3. After removing casing, add sausage to a bowl. Mash/grind the meat using a beef masher.

  4. Slice avocado in half and remove pit. Add avocado without the peel to the bowl with sausage.

  5. Add can of diced tomatoes and green chilies and fresh cilantro to the bowl. Combine ingredients.

  6. Slice mini peppers in half length-wise and remove the seeds.

  7. Use a spoon to fill mini peppers with sausage mixture.

  8. Place stuffed mini peppers on non-stick baking sheet and sprinkle with 2% shredded cheese.

  9. Place under broiler for 5-7 minutes or until cheese is melted. Serve immediately.
