Good morning friends! It’s time for confessional Tuesday. I had the greatest time this weekend during our holiday break. My weekend was full of fun, friends and laughter…oh, and some yummy treats. There I said it…those treats, gah! I didn’t just fall off the wagon…I jumped head first. And now I am dealing with the consequences.

But I feel so much better now that I’ve confessed and got back on track. Did anyone else have a hangup this weekend???

When we got back into town on Sunday, my first priority was the grocery store. On the drive home, I made our meal plan for the week and wrote out the grocery list so I was prepared. Since I have it all planned out, both me and my husband know what’s coming for our meals…so there is no reason to get take out!  Getting back on track isn’t always easy, but sometimes it is just what you need to do. If you had a slip, don’t beat yourself up…just become recommitted to your diet.

For the first grilled chicken and onionsmeal back, I decided to make some grilled chicken and onions. Get a saute pan out, place the chicken breast in the pan, and season with cilantro. Slice the onions and spread over the chicken breast. After the chicken is done cooking, take two leafs of romaine lettuce and place the chicken between the leaves (like a sandwich). Place this in a clean skillet and grill for a minute or two on each side. It is a great and easy recipe to get back into the swing of things!

It is like a quesadilla- without the tortilla.

*Disclaimer: it is not crispy like a quesadilla, but it is still pretty darn good!!

I served this with a side of steamed broccoli. There was even enough for leftovers today! Winning!
