Short days and long nights are here. With so much to do before nightfall each day, my slow cooker has been getting some exercise. Not many things are better than knowing dinner is taken care of before you get home! Enjoy a cozy night in with this slow cooker recipe for Green Enchilada Pork Chili.

Instructions
  1. Spray slow cooker with cooking spray.
  2. Place pork shoulder in slow cooker with onions and garlic.

  3. Top with salsa, cover and cook on low for 8 hours.

  4. Shred pork with forks, remove bones if needed.
  5. Add cilantro and beans.

  6. Cover and cook for an additional 15 minutes.

  7. Top with cheese and additional cilantro, if desired.
