Slow Cooker Chicken Fajitas

I love to use my slow cooker any time of year. But during the winter, I especially love it. After working all day, it is nice to soak up a few minutes of sunlight on a walk with my family before the sun sets. So having dinner ready to go in the slow cooker allows me to steal those minutes with them instead of standing in the kitchen.

One of our family favorites is Slow Cooker Chicken Fajitas. It is a no muss, no fuss kind of recipe. Just pile it all into the slow cooker and go about your day…no actual cooking required.

I hope you enjoy these chicken fajitas for a low carb, high protein slow cooker meal! What are some of your favorite slow cooker meals?

Mediterranean Mozza-Chicken

I have never been to the Mediterranean but I sure do love their foods and spices. Mediterranean cuisine generally has a focus on veggies, poultry, seafood, beans, and healthy fats. In my book, these are all good things! I made a big batch of this mediterranean mozza-chicken on Sunday evening and have been eating it for lunch all week long. Let me tell you, I’m not sick of it yet!!

This meal is so easy to make in a bigger quantity so you can have lunches during the week. Mix up the lunch by adding different sides…use a side salad, cottage cheese, steamed sugar snap peas, carrots and hummus…the list goes on and on!  Enjoy your visit into Mediterranean cuisine!

Buffalo Chicken Dip

I explore new foods and create recipes year round. Buffalo Chicken Dip is one of my new favorites. I am more creative with recipes during sports seasons…maybe because we have friends over more often and I want to try new things? Whatever the reason, I’m excited to share this new favorite with you!

I made this Buffalo Chicken Dip for a gathering this Sunday and it was a hit! The high protein, low carb nature of this recipe makes it great for post bariatric surgery or any weight loss plan.

I ate it with celery, but my husband and his carb loving friends opted for pita chips. It is versatile, flavorful, and easy— everything you need for a last minute party.

Chicken Enchilada Soup

If you are new to our blog, you might not realize how much I love slow cooker meals. No matter how much I enjoy cooking, quality time with Mr. A is so much better outside of the kitchen (apparently I don’t cook well with others). So evenings are cherished in my home. We love to take our pups for a walk, take our mountain bikes to a favorite trail for a ride, or catch up on The Walking Dead. But huge, elaborate meals can interfere with all of those activities. Enter- slow cooker. Today we are making Chicken Enchilada Soup.

Fiesta Chicken Salad

Hi everyone! It’s Elise, the dietetic intern here this week.  I’m originally from Texas, and we definitely like to eat our fair share of fajitas and tacos back home.  However, sometimes taste fatigue can occur when just eating the “insides” of the fajita and taco!  Here is a recipe for a fiesta chicken salad that is full of flavor.

Fiesta chicken salad can be served by itself in a bowl, with sliced cucumber, in a celery boat, or better yet— with the WeightWise Protein pretzels! Any way you try it, fiesta chicken salad is a great way to mix up your meals.

Salsa Verde Chicken

We are smack dab in the middle of holiday season! For me (and I’m sure you), that means last minute shopping trips, deep cleaning for family visits, packing for travel…all of this on top of the everyday stuff! Phew- I’m exhausted- aren’t you? It’s this time of year when eating out can get the best of you. Cooking at home on top of everything else can take the back burner. That’s where your slow cooker saves the day. With some of these staple ingredients on hand for Salsa Verde Chicken- dinner will be cooking while you are shopping!

I like to share food. Well, maybe I’m not necessarily good at sharing food, but rather food ideas. And it’s the ideas that matter, right?! (At least, that’s what I tell myself when subtly move my plate away from my husband’s reach).  You won’t want to share this Italian Lemon Chicken either once you try it.

These little chicken bites are great along side some pesto pasta, sauteed veggies, or as a salad topper.

Chicken Nachos

If you could pick a favorite food, what would it be? One that tops my list is nachos. But sadly, since tortilla chips are a main ingredient of nachos, the starch factor is hard to avoid. UNTIL NOW!!

I actually got this idea from one of my patients. Turkey pepperoni as chips. Genius!!! Just pop those babies in the microwave on a paper towel for a few minutes and you have crispy, high protein crisps.

If you are a nacho lover, as I am, then I think you will enjoy this! Additional toppings could be jalapenos, black olives, plain greek yogurt, salsa, or black beans.

What toppings would you use?

Southwest Chicken

Crockpot meals are very popular in my house!  I have 2 little girls, a full time career, a husband that’s in the US Navy…etc.  So I understand that cooking at home can be a challenge, there’s never enough time in a day, and sometimes it’s easier to pick up fast food on the way.

BUT a little planning can go a long way and can change the health of your diet drastically.  Cooking with my crockpot means dinner is ready when I get home, and that creates less stress and more time with my family in the evenings!

From my family to yours…Chris
