I love to use my slow cooker any time of year. But during the winter, I especially love it. After working all day, it is nice to soak up a few minutes of sunlight on a walk with my family before the sun sets. So having dinner ready to go in the slow cooker allows me to steal those minutes with them instead of standing in the kitchen.
One of our family favorites is Slow Cooker Chicken Fajitas. It is a no muss, no fuss kind of recipe. Just pile it all into the slow cooker and go about your day…no actual cooking required.

Slow Cooker Chicken Fajitas
Put all ingredients in slow cooker. Cook on low for 6 hours.
Top with shredded lettuce, shredded cheese or 1 tbsp sour cream if desired.
I have never been to the Mediterranean but I sure do love their foods and spices. Mediterranean cuisine generally has a focus on veggies, poultry, seafood, beans, and healthy fats. In my book, these are all good things! I made a big batch of this mediterranean mozza-chicken on Sunday evening and have been eating it for lunch all week long. Let me tell you, I’m not sick of it yet!!
This meal is so easy to make in a bigger quantity so you can have lunches during the week. Mix up the lunch by adding different sides…use a side salad, cottage cheese, steamed sugar snap peas, carrots and hummus…the list goes on and on! Enjoy your visit into Mediterranean cuisine!

Fiesta chicken salad can be served by itself in a bowl, with sliced cucumber, in a celery boat, or better yet— with the WeightWise Protein pretzels! Any way you try it, fiesta chicken salad is a great way to mix up your meals.
Chicken Fettuccine Alfredo is one of my favorite pasta dishes, but unfortunately it is loaded in carbs and fat. This recipe is a great alternative to alfredo, and is much lower fat and carbs (there is no pasta involved)!

I like to share food. Well, maybe I’m not necessarily good at sharing food, but rather food ideas. And it’s the ideas that matter, right?! (At least, that’s what I tell myself when subtly move my plate away from my husband’s reach). You won’t want to share this Italian Lemon Chicken either once you try it.
These little chicken bites are great along side some pesto pasta, sauteed veggies, or as a salad topper.

If you could pick a favorite food, what would it be? One that tops my list is nachos. But sadly, since tortilla chips are a main ingredient of nachos, the starch factor is hard to avoid. UNTIL NOW!!
I actually got this idea from one of my patients. Turkey pepperoni as chips. Genius!!! Just pop those babies in the microwave on a paper towel for a few minutes and you have crispy, high protein crisps.
If you are a nacho lover, as I am, then I think you will enjoy this! Additional toppings could be jalapenos, black olives, plain greek yogurt, salsa, or black beans.

Crockpot meals are very popular in my house! I have 2 little girls, a full time career, a husband that’s in the US Navy…etc. So I understand that cooking at home can be a challenge, there’s never enough time in a day, and sometimes it’s easier to pick up fast food on the way.
BUT a little planning can go a long way and can change the health of your diet drastically. Cooking with my crockpot means dinner is ready when I get home, and that creates less stress and more time with my family in the evenings!
