I love to use my slow cooker any time of year. But during the winter, I especially love it. After working all day, it is nice to soak up a few minutes of sunlight on a walk with my family before the sun sets. So having dinner ready to go in the slow cooker allows me to steal those minutes with them instead of standing in the kitchen.
One of our family favorites is Slow Cooker Chicken Fajitas. It is a no muss, no fuss kind of recipe. Just pile it all into the slow cooker and go about your day…no actual cooking required.
I hope you enjoy these chicken fajitas for a low carb, high protein slow cooker meal! What are some of your favorite slow cooker meals?

Put all ingredients in slow cooker. Cook on low for 6 hours.
Top with shredded lettuce, shredded cheese or 1 tbsp sour cream if desired.
July is officially here, friends! And you know what that means….cookouts, barbecues, backyard shindigs, or whatever you call it. I love cookout for a few reasons, but mainly because I think protein when I hear cookout. Burgers, chicken, ribs, and brats. If you are a novice at the grill, it can be intimidating. Start off with a food that doesn’t take much work, like grilled bratwurst. Happy grilling!
Bring water to boil in a medium saucepan.
Add brats to boiling water, reduce heat to medium, cover and let cook for 5 minutes.
After boiling for 5 minutes, remove brats to a paper towel lined plate. Place on hot grill.
Grill, turning on occasion until internal temp is 165 degrees or no longer pink inside (usually 10 minutes).
We are smack dab in the middle of holiday season! For me (and I’m sure you), that means last minute shopping trips, deep cleaning for family visits, packing for travel…all of this on top of the everyday stuff! Phew- I’m exhausted- aren’t you? It’s this time of year when eating out can get the best of you. Cooking at home on top of everything else can take the back burner. That’s where your slow cooker saves the day. With some of these staple ingredients on hand for Salsa Verde Chicken- dinner will be cooking while you are shopping!

Short days and long nights are here. With so much to do before nightfall each day, my slow cooker has been getting some exercise. Not many things are better than knowing dinner is taken care of before you get home! Enjoy a cozy night in with this slow cooker recipe for Green Enchilada Pork Chili.
Whether you are cooking for one or for a family, tacos are super simple to make and a huge time saver. The problem is those pesky tortillas and chips. What do you do when the family eats tortillas and you don’t? A lettuce wrap is one of the best ways to avoid the tortilla wraps. Enjoy chicken tacos with your family for your next meal.
White Chicken Chili is one of my favorite dishes. And this recipe was a hit! Not only did the Mr. (my usual taste tester) like it, our friends came over for dinner and loved how flavorful it was. Try it out…you won’t be disappointed.
