Slow Cooker Chicken Fajitas

I love to use my slow cooker any time of year. But during the winter, I especially love it. After working all day, it is nice to soak up a few minutes of sunlight on a walk with my family before the sun sets. So having dinner ready to go in the slow cooker allows me to steal those minutes with them instead of standing in the kitchen.

One of our family favorites is Slow Cooker Chicken Fajitas. It is a no muss, no fuss kind of recipe. Just pile it all into the slow cooker and go about your day…no actual cooking required.

  1. Put all ingredients in slow cooker. Cook on low for 6 hours.
  2. Top with shredded lettuce, shredded cheese or 1 tbsp sour cream if desired.

 July is officially here, friends! And you know what that means….cookouts, barbecues, backyard shindigs, or whatever you call it.  I love cookout for a few reasons, but mainly because I think protein when I hear cookout. Burgers, chicken, ribs, and brats. If you are a novice at the grill, it can be intimidating. Start off with a food that doesn’t take much work, like grilled bratwurst. Happy grilling!

  1. Bring water to boil in a medium saucepan.
  2. Add brats to boiling water, reduce heat to medium, cover and let cook for 5 minutes.
  3. After boiling for 5 minutes, remove brats to a paper towel lined plate. Place on hot grill.
  4. Grill, turning on occasion until internal temp is 165 degrees or no longer pink inside (usually 10 minutes).

Instructions
  1. Add chicken to slow cooker with chicken stock. Cook on high for 3 hours or low for 6-7 hours.
  2. Remove chicken from slow cooker, shred, then return to slow cooker.
  3. Add garlic, onion, white beans, green chilies, and seasoning to slow cooker. Stir well and continue cooking for 1 hour on low.
  4. Garnish with green onions and shredded cheese if desired.
