This was one of my favorites growing up! Not too many Okies have ever heard of or tried this, so I thought it would be perfect for our theme of avoiding taste fatigue. If you’ve never tried rutabaga, now is the time to do it. What is a rutabaga you ask? It’s a root vegetable and a very close relative to the turnip…the taste is best described as a combo of turnip and cabbage.
Which you combine this with the sweet taste of carrots, the flavor is awesome. Carrot and Rutabaga Mash can be the perfect substitute for mashed potatoes.

Ingredients
- 1 lb carrots peeled and cut 1-2 inch pieces
- 1 lb rutabaga peeled and cut into 1 inch cubes
- 2-3 tbsp nonhydrogenated margarine or buttery spread (i.e. Earth Balance spread)
- salt to taste
- black pepper to taste

Instructions
- Boil carrots and rutabaga together until soft (30-45 minutes).
- Drain and add margarine/buttery spread.
- Mash together using a potato masher (chunkier texture) or mixer (smoother texture).
- Add salt and black pepper to taste.
