Cheesy Taco Chicken & Chili Roasted Cauliflower

Who likes spicy foods? What about cheesy? It’s the best of both worlds, in my opinion. Just because taco shells and tortillas are off the menu, taco flavor doesn’t have to be. That’s why I put together these Cheesy Taco Chicken breasts with a side of Chili Roasted Cauliflower. 

If you’ve never had roasted cauliflower, you are in for a treat. It gets crispy and the flavor is way better than steamed or raw cauliflower. With the slight spice of the chili and cayenne, it is a richly flavored side dish that goes perfect with the Cheesy Taco Chicken. You can even add some hot sauce or salsa for even more of a kick.

The best part is that this meal is pretty simple and did not take long to put together. If you cut the cauliflower ahead of time, it takes even less time.

  1. Preheat the oven to 400 degrees Fahrenheit
  2. Place the chicken breasts into a glass pan and sprinkle with cumin, chili powder, smoked paprika, and garlic salt.

  3. Cut the cauliflower into small florets and place into a metal pan. Spray lightly with cooking spray and toss to coat.
  4. Season cauliflower liberally with chili powder. Season with garlic salt and cayenne pepper to taste.

  5. Place the chicken and the cauliflower into the oven and bake until the chicken reaches 165F internally. This can take 25-30 minutes depending on the thickness of the chicken breasts.
  6. Remove the chicken from the oven and top with 1/4 cup of low fat cheese for each breast. Place back into the oven until melted.
  7. Remove the chicken once the cheese is melted. Turn the oven on broil to crisp the cauliflower, about 2-3 minutes.
  8. Remove the cauliflower from the oven and serve. Top with salsa or hot sauce as desired.
