This dip is quick and easy to whip up with the help of a cheese grater to grate the cucumber instead of dicing it. Tip: partially peeling the cucumber will help remove some of the bitterness of the peel and get rid of some of the waxiness. If you are not bothered by that, you do not need to peel it.
This dip is delicious served with fresh vegetables such as celery, carrots, zucchini, and tomatoes or used as a dressing or condiment on chicken, fish, and even in lettuce wraps.
