Eggplant Parmesan

Buckle your seat belts folks! Because today we are using eggplant. Yep, I said eggplant. And it is delicious! This would be a great low-carb option similar to lasagna.

Finding a good eggplant is step one.


Look at this lovely eggplant!


You want the eggplant to be smooth, no major bumps or soft spots. For this dish, you want the eggplant to be firm. Find one? Good, let’s get cooking!


Pair this dish with a good protein…I suggest grilled/baked chicken or turkey Italian sausage.

  1. Preheat oven to 350F
  2. Saute onion and garlic over medium heat for 5 mins
  3. Add spinach, and saute until cooked down (2-3 mins)
  4. Pour in marinara sauce, stir, and heat for 2-3 mins
  5. Add basil and italian seasoning
  6. Stir the ricotta and mozzarella cheeses together in separate bowl
  7. Line the bottom of a casserole dish with a layer of sliced eggplant, then top with a layer of the ricotta & mozzarella mixture. Repeat this until you've used all your eggplant and cheese mixture.
  8. Pour the marinara & vegetable mixture over the top
  9. Sprinkle top with parmesan cheese
  10. Place into the oven and cook for 30 minutes. If the top begins to brown too much, you can cover the top with aluminum foil.
