Fajita Steak Bowl

While this fajita steak bowl looks like it has a ton of ingredients, it is one of the easier and faster meals I make. In fact, I got home from work yesterday to my mister doing the dishes (yep, he does dishes!). During the 20 minutes it took him to finish cleaning, I cooked our entire supper. Awesome!

This makes a great option for those of you who love Mexican food or to mix up “Taco Tuesday.” Try it with a side of cauliflower rice with lime and cilantro. You can even interchange the steak for chicken, pork, or shrimp; or try it with zucchini and yellow squash or asparagus and mushrooms instead of peppers. The possibilities are endless!

Instructions
  1. First, cut the steak into strips.
  2. Heat a saute pan on the stove over medium heat.
  3. Add steak and season with fajita seasoning. Saute, stirring occasionally.
  4. Cut onion and bell peppers into strips.
  5. In a separate pan, heat 1 tsp olive oil and add peppers and onions. Saute until onions are opaque and peppers are slightly soft.
  6. Drain black beans. Add to a small pot with a small amount of water (1/2 cup) and place over medium heat. Stir occasionally.
  7. In a bowl, layer black beans, steak, and vegetables. Top with an avocado slice and salsa or pico de gallo
