While this fajita steak bowl looks like it has a ton of ingredients, it is one of the easier and faster meals I make. In fact, I got home from work yesterday to my mister doing the dishes (yep, he does dishes!). During the 20 minutes it took him to finish cleaning, I cooked our entire supper. Awesome!
This makes a great option for those of you who love Mexican food or to mix up “Taco Tuesday.” Try it with a side of cauliflower rice with lime and cilantro. You can even interchange the steak for chicken, pork, or shrimp; or try it with zucchini and yellow squash or asparagus and mushrooms instead of peppers. The possibilities are endless!
