Low Carb Vegetarian Bolognese

Here is a great recipe for those of you who may be vegetarian/vegan or just want to have a Meatless Monday. After bariatric surgery, it can be difficult to adhere to a vegetarian lifestyle because your options for what to eat become even more limited, but there are a few good options such as low-carb meat substitutes like Beyond Meat.

Beyond Meat is a relatively new company that is taking the foodie world by storm with their line of products that are designed to resemble what actual beef and chicken taste and even feel
like. Some of the products taste so similar to meat, meat lovers can be fooled by it and vegetarians and vegans sometimes have to check twice! Today’s recipe is from their website and I paired them with the carrot Green Giant veggie spirals. This sauce can also be used as a lasagna sauce, so try it with eggplant “noodles” or in zucchini boats!

Instructions
  1. Saute onion and garlic in skillet with olive oil until tender, about 5 minutes.
  2. Add Beyond Meat beef crumbles. Cook for 1 minute.
  3. Add rest of ingredients and bring to a simmer.
  4. Cook and reduce over a period of 30 minutes. If you find that the sauce is too thick to your liking, you can thin it with water or more vegetable broth.
  5. Spoon over veggie spirals and enjoy!
