Mediterranean Egg Muffins

I don’t know about you, but sometimes I get burnt out on just scrambling my eggs in the mornings.  I also don’t always give myself enough time to make breakfast each morning!  Preparing these Mediterranean Egg Muffins in advance will save you time in the mornings and provide you with some yummy taste variety. Remember that when you plan ahead, you set yourself up for success. Having a pre-made breakfast will start your day off wonderfully!

Feel free to mix up the veggies and even add some turkey sausage to these delightful little egg muffins!

Instructions
  1. Crack eggs into mixing bowl and beat with whisk or fork

  2. Slice cherry tomatoes into quarters

  3. Slice artichoke hearts into pieces

  4. Add tomatoes, artichoke hearts, and shredded cheese to egg mixture

  5. Spray muffin tin with cooking spray and pour the mixture into the tin

  6. Bake at 350F for 15-20 minutes, until muffins are set
