Who needs to spend 30 minutes to an hour making dinner after a long day at work? Not you! This pork roast makes a great dinner option for busy days, mainly because you only need 3 ingredients and the slow cooker does most of the work. Let’s get going!
To get started you will need a slow cooker, knife, and cutting board. Set your slow cooker to low. When I made this yesterday, I cooked it on low for 8 hours. It is always more juicy when I let it cook “low and slow”, but in the past, I have also set it on high for 4 hours…turns out great, just not as juicy.
Next, get your pork roast ready (pork chops are okay too). Set the roast in the bottom of the slow cooker. Now, here’s the hard part….pour the sauerkraut over the roast. Tedious, isn’t it? 😉 Finally, give the onion a rough chop and you are in business.
After wiping the sweat from your brow, put the lid on and walk away.
Another option is to place all of the ingredients into a gallon sized freezer bag a day or two before, and just dump the ingredients into the slow cooker in the morning. Saves you a little bit of time.
You will come home to an amazing aroma. The roast will then shred with a fork.
Delicious! Enjoy this easy meal rolled in a cabbage leaf, and serve with some roasted red peppers and asparagus.
