How is everyone this Monday morning??? I am a little slow moving myself, but nothing a little coffee can’t fix! My weekend was great…full of time with friends, relaxing with the hubs, and beautiful weather. So, let’s get cooking with a nice little recipe for Stuffed Peppers.

Stuffed Peppers

These are wonderful when topped with some salsa and a bit of guacamole. They are a great Taco Tuesday option!

I love to make these on the weekend because it’s easy to make a few more peppers for leftover lunches on Monday! What’s on your menu for lunch today???

Instructions
  1. Preheat oven to 350.
  2. Put a large pot of water on to boil.
  3. Cut the tops off the peppers and remove the seeds and membrane.
  4. Place the whole peppers in the boiling water for 2-3 minutes (just until tender). Remove with spoon and let dry.
  5. Heat olive oil in saute pan over medium heat. Add onions and garlic, cook until soft (about 3-4 minutes).
  6. Add sausage to pan, cook and stir until brown. Once browned, add fresh spinach and stir until wilted down.
  7. Pour diced tomatoes and tomato sauce over sausage mixture and stir.
  8. In a baking dish, add just enough water to cover the bottom. Stuff the peppers with the sausage mixture and sprinkle with cheddar cheese. Place the stuffed peppers into the baking dish and bake for 25 minutes.
  9. Remove from the oven and enjoy!
