Zucchini Fries

French fries. It’s pretty much a love hate relationship. I love the way they taste, but I hate how they derail my diet. So I was determined to find the perfect substitute for these terrible but yummy little guys. And alas, we have Zucchini Fries! These are a great option to give yourself a crispy, crunchy, and salty fix.

Once you pull these out of the oven, you have a fantastic substitute for french fries. I served these with a grilled onion turkey burger…YUM. It’s also a great way to get kids to eat vegetables!

So good, you don’t even need ketchup!

Instructions
  1. Preheat the oven to 350 degrees and spray a baking sheet with non-stick spray.
  2. Cut the zucchini in half length ways. Then cut each half into about 3-4 inch sections. Now cut those sections into little "match sticks"...just make 'em look like french fries!
  3. Crack both eggs into a bowl and whisk lightly (just until the yolks break). Pour the Parmesan cheese into a different bowl.
  4. Take a few strips of zucchini and dredge them in the egg, then lightly roll in the cheese.
  5. Place in a single layer on the baking sheet. Repeat until all of the zucchini is on the baking sheet.
  6. Sprinkle with garlic powder, salt and pepper.
  7. Place in the oven for about 10 minutes. Remove from oven, turn the fries and replace for another 5-7 minutes.
