French fries. It’s pretty much a love hate relationship. I love the way they taste, but I hate how they derail my diet. So I was determined to find the perfect substitute for these terrible but yummy little guys. And alas, we have Zucchini Fries! These are a great option to give yourself a crispy, crunchy, and salty fix.
Once you pull these out of the oven, you have a fantastic substitute for french fries. I served these with a grilled onion turkey burger…YUM. It’s also a great way to get kids to eat vegetables!
So good, you don’t even need ketchup!

Ingredients
- 1-2 zucchini cut into spears
- 2 eggs
- 1 cup Parmesan cheese low-fat, grated or ground

Instructions
- Preheat the oven to 350 degrees and spray a baking sheet with non-stick spray.
- Cut the zucchini in half length ways. Then cut each half into about 3-4 inch sections. Now cut those sections into little "match sticks"...just make 'em look like french fries!
- Crack both eggs into a bowl and whisk lightly (just until the yolks break). Pour the Parmesan cheese into a different bowl.
- Take a few strips of zucchini and dredge them in the egg, then lightly roll in the cheese.
- Place in a single layer on the baking sheet. Repeat until all of the zucchini is on the baking sheet.
- Sprinkle with garlic powder, salt and pepper.
- Place in the oven for about 10 minutes. Remove from oven, turn the fries and replace for another 5-7 minutes.
