What is Bariatric Pizza?
Let’s be honest- at some point after surgery, the pizza craving hits. Maybe it’s a Friday night, maybe it’s the smell from your neighbor’s kitchen, or maybe you just really, really miss that combination of melted cheese, tangy sauce, and all your favorite toppings. Whatever triggers it, you’ll be pleased to know that pizza doesn’t have to be a thing of the past. It just needs a little reinvention!
Bariatric pizza is exactly what it sounds like: all the flavors and satisfaction of pizza, adapted for your post-surgery stomach. The traditional doughy base is the main problem- it’s low in protein, high in refined carbohydrates, and takes up precious space that your body needs for nutrients. So we swap it out. Or, in our favorite version, we skip it altogether. Here are a few ways we go about the pizza dilemma:
The Pizza Toss: Our Favorite Option
The pizza toss is simple, genius, and genuinely delicious: it’s everything you love about pizza — the sauce, the cheese, the toppings — served in a bowl, no crust required. It’s fast, it’s high in protein, and it scratches that pizza itch in a way that feels indulgent without derailing your progress.
🍕 Pizza Toss Recipe
Ingredients (1 serving):
• 100g lean ground beef, turkey mince, or diced chicken breast
• 3–4 tablespoons low-sugar tomato or pizza sauce
• 30g reduced-fat mozzarella, shredded
• Your favourite toppings: sliced mushrooms, diced peppers, olives, spinach, pepperoni
• Italian herbs, garlic, chilli flakes to taste
Method:
1. Cook your protein in a non-stick pan with a little olive oil spray, seasoning with garlic and Italian herbs.
2. Add your chosen vegetables and cook until softened.
3. Stir in the tomato sauce and heat through.
4. Transfer to a bowl, top with mozzarella, and pop under the grill for 2–3 minutes until the cheese is golden and bubbling.
5. Serve immediately and enjoy every single bite.
If You Want the Full Pizza Experience: Crust Alternatives
Sometimes you want to pick it up and eat it like a pizza. We get it. The good news is there are some brilliant low-carb, high-protein crust options that work beautifully after bariatric surgery.
Cauliflower crust is probably the most well-known alternative. Made from blended cauliflower, egg, and cheese, it’s low in carbs and holds together surprisingly well. Look for pre-made versions in the supermarket, or make your own at home.
Chicken crust is a bariatric favorite for good reason: it’s almost entirely protein. Simply combine minced chicken breast with egg and parmesan, press into a thin base, bake until firm, and add your toppings. It sounds unusual but tastes genuinely great.
Cottage cheese crust is another high-protein option that’s become popular in the bariatric community. Blended cottage cheese mixed with egg and a little almond flour creates a surprisingly sturdy and protein-rich base.
Chickpea crust is a great plant-based option. Made from chickpea flour, it’s higher in fibre and protein than traditional dough and has a lovely nutty flavour that pairs well with classic pizza toppings.
The Bottom Line
Bariatric surgery changes your relationship with food, but it doesn’t have to take away the joy of it. With a little creativity, pizza night is absolutely still on the table. Whether you go for a pizza toss, a cauliflower crust, or a chicken base, you’re getting the flavors you love in a way that supports your goals rather than working against them.
