Servings 1
  • 1 Granny Smith apple, peeled, cored & diced
  • 1 packet Splenda or sweetener of choice
  • ½ tsp ground cinnamon
  • 1 pinch ground nutmeg
  • 1 tbsp water
  • Cool Whip Lite (optional topping)
  • plain Greek yogurt (WeightWise alternative to Cool Whip)
  • extra cinnamon, to finish (optional)
  1. 1
    Prep the apple

Wash, peel, core, and dice the apple into medium chunks — about ½ inch pieces. Place in a small microwave-safe bowl.

  2. 2
    Season & cover

Pour the Splenda packet over the apples. Sprinkle the cinnamon and nutmeg over the top and add the tablespoon of water. Stir briefly to combine. Cover the bowl tightly with a microwave-safe plate or plastic wrap, leaving a small gap for steam to escape.

  3. 3
    Microwave & check

Microwave on high for 1 minute. Carefully remove the cover — steam will escape, it will be very hot. Check the softness of the apple pieces with a fork. If they still have too much resistance, recover and microwave in 30-second increments until tender and fragrant. Total time is usually 1–2 minutes depending on your microwave and apple size.

  4. 4
    Top & enjoy

Let cool for 1–2 minutes — the apple and its juices will be extremely hot straight from the microwave. Top with a small spoonful of Cool Whip Lite or a dollop of plain Greek yogurt and a final dusting of cinnamon. Eat immediately while warm.

  • Granny Smith is the right apple: The natural tartness of a Granny Smith balances the Splenda and cinnamon beautifully — sweeter apple varieties can taste cloying once the sweetener is added. Granny Smith also holds its shape better during cooking than softer varieties.
  • Nutmeg makes the difference: A tiny pinch of nutmeg alongside the cinnamon is what makes this taste like actual apple pie filling rather than just a warm apple with cinnamon on it. Don't skip it.
  • Greek yogurt over Cool Whip: A spoonful of plain Greek yogurt is the WeightWise upgrade — it adds a cool, creamy tang that complements the warm spiced apple perfectly and contributes protein rather than empty calories. Both work; Greek yogurt is the better choice.
  • Be careful with the steam: Covering the bowl traps steam that gets very hot — always remove the cover carefully by lifting the far edge first so the steam vents away from you.
  • Scale up easily: Double the apples and split between two bowls for a quick dessert for two — microwave each bowl separately for best results rather than trying to cook both at once.
