Pan Seared Tilapia

Tilapia marinated in a bright lemon, garlic, and herb mixture then seared in a hot skillet until golden and flaky. A clean, simple weeknight fish dinner that comes together in under 30 minutes — most of that hands-off marinating time. Light enough for a weeknight, impressive enough for company.

  • 2 tilapia fillets
  • 3 cloves garlic, minced
  • 2 tbsp fresh parsley, minced
  • 3 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp white wine vinegar (optional — adds a bright tang)

    Make the marinade

    In a small bowl, combine the minced garlic, parsley, lemon juice, olive oil, oregano, salt, pepper, and white wine vinegar if using. Stir well to combine.

    Marinate the tilapia

    Place the tilapia fillets in a zip-lock bag and pour the marinade over the top. Seal, shake gently to coat, and refrigerate for 20–30 minutes. Don't marinate longer than 30 minutes — the lemon juice will start to break down the delicate fish texture if left too long.

    Pat dry & sear

    Remove the fillets from the marinade and pat lightly dry with a paper towel — removing excess surface moisture helps the fish sear rather than steam. Heat a skillet over medium-high heat lightly coated with cooking spray. Add the tilapia and cook for 3–4 minutes without moving it. Flip carefully and cook for another 3–4 minutes until the fish is opaque throughout and flakes easily with a fork.

    Transfer to plates and serve immediately with lemon wedges and a sprinkle of fresh parsley. A squeeze of fresh lemon right before eating makes all the difference.

  • Don't over-marinate: 20–30 minutes is ideal for tilapia — the lemon juice in the marinade is acidic and will start to break down the delicate texture of the fish if left longer. Set a timer.
  • Pat dry before searing: Wet fish steams rather than sears — a quick pat with paper towels before it hits the pan makes the difference between a pale, soft fillet and one with a proper golden crust.
  • Don't move the fish: Let the tilapia cook undisturbed for the full 3–4 minutes so the crust has time to form. Moving it too early causes it to stick and fall apart.
  • Swap the fish: This marinade works beautifully on any mild white fish — mahi-mahi, cod, or flounder are all great alternatives with the same cook time.
