Baked Broccoli
Chicken Alfredo
Creamy, cheesy, and completely satisfying — this baked casserole brings together tender chicken, broccoli, and a lightened-up Alfredo sauce enriched with Laughing Cow cheese spread. All the comfort of a classic pasta bake without a single noodle in sight.
- Chicken
- 4 boneless, skinless chicken breasts
- 1 tbsp Italian seasoning
- 1 tsp garlic powder
- — salt & black pepper, to taste

- Casserole
- 2 cups broccoli florets
- 3 wedges Laughing Cow White Cheddar spread
- ¾ cup Alfredo sauce
- Topping
- ½ cup low-fat mozzarella or Parmesan, shredded

Preheat & season the chicken
Preheat oven to 350°F. Season the chicken breasts on both sides with Italian seasoning, garlic powder, salt, and pepper.

Cook the chicken
Spray a skillet with cooking spray and heat over medium heat. Cook the chicken for 6–7 minutes per side until golden and cooked through to an internal temperature of 165°F. Transfer to a cutting board and let rest for 5 minutes, then chop into bite-sized pieces.

Steam the broccoli
Place the broccoli florets in a pot with ¼ cup of water. Bring to a boil, then reduce heat, cover, and simmer for 3–4 minutes until just tender. Drain well and roughly chop into smaller pieces.

Make the filling
In a large bowl, combine the chopped chicken, broccoli, and Laughing Cow cheese wedges. Stir well — the warmth of the chicken and broccoli will help the cheese spread melt and coat everything. Pour in the Alfredo sauce and stir again until everything is evenly coated.

Assemble & bake
Spray a 9x11 baking dish with non-stick cooking spray. Spread the chicken and broccoli mixture evenly into the dish. Top with shredded mozzarella or Parmesan. Bake uncovered for 20–25 minutes until bubbly and the cheese is melted and lightly golden.

Rest & serve
Let the casserole rest for 5 minutes before serving. Scoop into bowls and serve hot — this is great on its own or spooned over cauliflower rice for extra volume.
- Laughing Cow tip: The cheese spread melts beautifully into the warm chicken and broccoli mixture, adding creaminess without a lot of calories. Can't find the White Cheddar variety? The original or Garlic & Herb flavors both work great.
- Don't skip the rest: Letting the casserole sit for 5 minutes after baking helps the sauce set so it scoops cleanly rather than running everywhere.
- Add more vegetables: Cauliflower florets, sliced mushrooms, or baby spinach stirred into the filling are all excellent additions.
- Serve over cauliflower rice: Spooning this over a bowl of steamed or sautéed cauliflower rice stretches the recipe further and makes it even more filling.
- Leftovers: Stores well in the fridge for up to 4 days and reheats beautifully in the microwave. The sauce thickens overnight so add a splash of chicken broth when reheating if needed.
