Cauliflower is a great substitute for SO many things such as pizza crust, rice, potatoes, etc. When I was a kid, my uncle used to make a twice baked potato casserole every year for Thanksgiving. He lives in Wyoming now so I thought, why not try replicating the recipe this year but substituting cauliflower for the potatoes. I am not going to lie, this recipe was not my favorite. However, it did not taste bad in anyway, I just felt like it was missing something. Maybe using fresh cauliflower rather than frozen, or different seasonings, etc would change my mind. Crockpot Loaded Cauliflower
Instructions
Add frozen cauliflower, cubed laughing cow wedges, shredded cheese, diced turkey bacon, and seasoning to crockpot.
Cook on low for 2-3 hours. Enjoy :).
