A fast, filling salad that works just as well for one as it does for a whole family. Warm chicken over fresh spinach with creamy feta, juicy strawberries, tomatoes, and a tangy raspberry vinaigrette — on the table in 20 minutes and easy enough for any weeknight.

  • 1 boneless, skinless chicken breast, cubed
  • 2 cups fresh baby spinach
  • ½ cup fresh strawberries, sliced
  • ½ cup cherry or grape tomatoes, halved
  • ¼ cup red onion, thinly sliced
  • 3 tbsp feta cheese crumbles
  • 2 tbsp sunflower seeds
  • 2 tbsp raspberry vinaigrette dressing

    Prep the produce

    Wash and dry the spinach, strawberries, and tomatoes. Slice the strawberries, halve the tomatoes, and thinly slice the red onion. Set everything aside.

    Cook the chicken

    Lightly spray a skillet with cooking spray and heat over medium-high. Add the cubed chicken and cook, stirring occasionally, for 7–8 minutes until cooked through with no pink remaining. Season with salt and pepper if desired.

    Build the salad

    Add the spinach to a large bowl or plate. Arrange the strawberries, tomatoes, and red onion over the top. Add the warm chicken, then scatter the feta crumbles and sunflower seeds over everything.

    Dress & serve

    Drizzle with raspberry vinaigrette just before serving and toss gently to coat. Serve immediately while the chicken is still warm.
