Easy, simple, and delicious! Three things that I look for when it comes to busy weeknight meals. You can make this with or with out the cauliflower rice. If you would like to keep the clean up to a minimum, you do not need to cook the cauliflower rice in a skillet after you steam it in the microwave. I just like mine crispy. This recipe could be made with chicken, steak, and/or pork as well. Just make sure whatever protein you choose to use, that it is cooked thoroughly. Hope you enjoy :).

Instructions
- Mix together fajita seasoning (I used a package) with 1/3 cup of water. Add to thawed shrimp. Let shrimp marinade for one hour or overnight.
- Preheat oven to 400 degrees. Slice your bell peppers and onion.
- Mix the peppers and onions with the shrimp. Spread evenly on a sheet pan.
- Place sheet pan in the oven for 15 minutes.
- Serve over cauliflower rice, I typically crisp mine up in a skillet, and other toppings of your liking (ex. black beans, cheese, jalapenos, salsa, cilantro, etc).
