- 1 tbsp olive oil
- 1/4 cup green pepper diced
- 1/4 cup yellow onion diced
- 2 eggs whisked (or 4 egg whites)
- 1/4 cup feta cheese crumbled
- 1/2 cup fresh spinach
Ingredients

- Over medium-low heat, saute onions and green peppers in olive oil until vegetables are tender. (7 minutes)
- Pour whisked eggs into the skillet and cook for 3-5 minutes.
- Sprinkle feta cheese and fresh spinach over the egg mixture.
- Cover skillet with lid and cook until the egg is lightly browned on the bottom.
