Breakfast is my favorite meal of the day. Actually,  I could eat breakfast foods for every meal, every day. They are SO good. That’s why I love this quick and easy frittata recipe. Vegetables, eggs, and cheese! What a nutritious and delicious way to start the day! Try this Egg and Veggie Frittata  for a easy fix on a rushed weekday morning or for a tasty weekend brunch with family.

One of the great things about egg recipes like this one is you can use any veggies you desire- mushrooms, tomatoes, zucchini- you name it, you can add it! Use a spatula to get your delicious egg and veggie frittata onto your plate and ENJOY!

Instructions
  1. Over medium-low heat, saute onions and green peppers in olive oil until vegetables are tender. (7 minutes)

  2. Pour whisked eggs into the skillet and cook for 3-5 minutes.

  3. Sprinkle feta cheese and fresh spinach over the egg mixture.

  4. Cover skillet with lid and cook until the egg is lightly browned on the bottom.
