So I decided to try these yesterday for a breakfast that is quick, easy, and packed with nutritious and delicious flavors. And do you know what the best part is? I made enough for the whole week! A week full of breakfast done in 20 minutes…can’t beat that in my book!

- 6 eggs
- 6 slices bacon
- 1/2 cup onion chopped
- 1/2 cup Red Pepper chopped
- 1 tbsp chives chopped
- 1/2 cup cheddar cheese shredded

Instructions

Start by pre-heating the oven to 350 degrees.

Next, get to chopping on those onions, peppers and chives

Crack the eggs into a bowl and whisk until smooth.

Pour the veggies into the egg mixture.

Place the bacon around the edge of the muffin tin so it is standing up against the side

top with cheddar cheese
