Balsamic Dressing
- 1/4 c olive oil
- 2 T balsamic vinegar
- 1 T Dijon mustard
- 1 packet artificial sweetener of choice (Stevia, Splenda)
- salt and pepper to taste
Salad
- 5 oz 50/50 spinach/spring greens package
- 1 apple thinly sliced + lemon juice to prevent browning
- 1/4 c red onions thinly sliced
- 1/3 c walnuts
- 1/3 c feta cheese

Instructions
- In a bowl or jar with a tight lid, combine olive oil, balsamic vinegar, Dijon mustard, sweetener, and salt and pepper.
- Whisk or shake ingredients together. Refrigerate until serving.
