Baked Chicken Tenders

I love oven and slow cooker meals for so many reasons. One being that I have at least 30 minutes to do something else while the food is cooking. On a very blessed and rare occasion, that something is a nap (!!!!) or maybe getting a little extra exercise.

So last night when the husband was in class and not home for dinner, I thought about an easy dish that is good for one person and can reheat well. Plus I wanted something to bake so I could have that wonderful half hour! Alas, I decided on baked chicken tenders to top a nice green salad.

These baked chicken tenders are so very easy and versatile. Add them to a salad for protein, wrap them in a lettuce leaf with slaw mix for extra crunch, eat them plain with a side of veggies…there are so many possibilities. I hope you enjoy!!

Baked Chicken Tenders
Baked Chicken Tenders are so easy and versatile. Use them as a salad addition, wrap, or main dish.

Instructions
  1. Preheat oven to 350 degrees. Spray baking sheet with non-stick spray.
  2. Crack eggs into bowl and whisk until just smooth.
  3. In a separate bowl, add ground pork rinds and garlic powder. Stir together.
  4. Dredge a piece of chicken in the egg, then immediately transfer to the pork rind mixture. Lightly coat the chicken in pork rinds then place on a baking sheet.
  5. Repeat for all chicken tenders. Place in oven for 15 minutes, then flip. Return to oven for 12 minutes or until chicken is cooked through (internal temp of 165 degrees).
