No rolling of the eyes, please. This is not just another chicken recipe! Bruschetta Chicken is a nice spin on a traditional grilled chicken recipe. I mean, look at this color…isn’t it beautiful?!

Ingredients
- 4 boneless, skinless chicken breast
- 1 avocado
- 1 tomato diced
- 6 fresh basil leaves finely chopped
- 2 tbsp olive oil
- 1/4 cup part skim mozzarella cheese
- 1/2 tsp salt
- 1 tsp black pepper
- 1 tbsp Italian seasoning

Instructions

Turn broiler on high.

Heat skillet over medium-high heat, add chicken. Sprinkle with salt, pepper, and italian seasoning. Cook for 5-6 minutes per side or until no longer pink in inside/internal temp of 165 degrees.

Slice avocado and chop the tomato and basil leaves.

Place tomato, fresh basil, and olive oil in bowl. Stir and let sit for 10 minutes.

Place grilled chicken on foil lined baking sheet.

Layer on sliced avocado, bruschetta, and cheese. Broil on high for 2 minutes.

Remove from oven and serve immediately.
