I have had MANY patients tell me that they substitute radishes in place of potatoes in multiple recipes. For example crockpot roast, stew, etc. I had not tried radishes since I was a kid, I know shame on me, so I was reluctant at first. Let me tell you that my boyfriend, sister (whom are both very picky), and I loved these! You could keep yours simple like I did, no shame in that. However, I also think using a ranch seasoning packet, fresh herbs, lemon, topping with parmesan, etc would be delicious as well. The possibilities are endless!

- 1 bag radishes Halved
- 2 tablespoons olive oil
- 2 garlic cloves minced
- salt and pepper for taste

Instructions
- Pre-heat oven for 350 degrees. Slice radishes in half (I quartered a few big ones). Mix olive oil and minced garlic together. Brush the mixture over the radishes. Top with salt and pepper.
- Bake for 45-60 minutes.
