Roasted Radishes

Finding new and flavorful side dishes can be challenging. Especially low carb sides. Radishes can be a great, flavorful side dish that you don’t run across too often. I am a huge fan of roasted vegetables, but I’ve never tried roasted radishes. I figured if roasted carrots, turnips, and brussels sprouts are good, then roasted radishes couldn’t be too bad.

Instructions
  1. Preheat oven to 375 degrees.
  2. Start by washing and separating the bunch of radishes.

  3. Remove the stems and roots off each radish, then cut into quarters. Set these aside until the seasoning is ready.

  4. Minced oregano and garlic.

  5. In a small bowl, stir together oregano, garlic, lime juice, olive oil, salt, and black pepper.

  6. Toss the radishes in the seasoning mixture until each radish is well coated.

  7. Spread the radishes evenly into a glass baking dish. Place in a hot oven to roast for about 30 minutes or until just tender.

  8. Serve with grilled pork chops or chicken.
