Tomato Cucumber Salad

Cooking for picky eaters can be frustrating and a bit tricky. Luckily, my husband is not all that picky and will generally try anything I cook. Even though he eats anything I make, he does have preferences. And some preferences are not very healthy. One is this traditional creamy German Tomato Cucumber Salad. Since the original recipe calls for copious amounts of sour cream and sugar, I took it upon myself to modify it into a higher protein version. And let me tell you, he didn’t even notice!

Instructions
  1. Peel cucumber and slice into thin discs. Wash cherry tomatoes and cut in half.
  2. Mix plain greek yogurt, vinegar, dill, and parsley in a bowl.
  3. Add cucumbers and cherry tomatoes to bowl ans stir until coated.
  4. Refrigerate for 20 minutes before serving.
