Ingredients
- 4 boneless, skinless chicken thighs 1-inch cubes
- 1 tsp cilantro
- 1 tsp garlic powder
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 1 red bell pepper sliced
- 1 small onion sliced
- 1/2 tomato chopped
- 4-6 romaine lettuce leaves
- 1/2 avocado if desired
- shredded cheese if desired
- salsa if desired
- plain greek yogurt if desired (to replace sour cream)

Instructions
- Place cubed chicken thighs in skillet over medium-high heat. Add spices to chicken. Cook chicken, stirring occasionally for about 4 minutes.
- Add sliced peppers and onions to chicken. Continue cooking, stirring occasionally, for about 4-5 minutes or until chicken is no longer pink in middle.
- Chop tomatoes and avocado.
- Layer chicken and veggies on top of lettuce leaf. Top with tomatoes, avocado, cheese, salsa, or plain greek yogurt if desired.
