Crustless protein pizza or pizza casserole? Same thing, anyways, this is another simple weekday recipe. You most likely already have these ingredients in your refrigerator. If you have any vegetables that are about to go bad, you can do a fridge “clean out” with this recipe! I know the ingredients list may make the recipe seem more complicated, but you can take away/add anything. That way you can add which ever non-starchy vegetables and spices that you like or have on hand.
I prefer to add spices to my vegetables and spices to the jarred sauce for more flavor. For this recipe, I used a plant based protein, but of course you can use which ever type of lean, protein source you want. If you are short on time, you can use ready to go proteins such as, rotisserie chicken or cubed deli meat to add more protein. Add all the ingredients to a large oven safe dish, bake, and enjoy!
