You all know by now how much I love using my slow cooker! Having a family, full time job, etc keeps me busy so I love coming home to a meal that’s already done! The mushroom roast a slight variation from a traditional roast. I love mushrooms, and the combination with beef was great! I served the slow cooker mushroom roast with green beans on the side, no potatoes or starches needed!
If you struggle with selecting the right types of meats, here are tips to choose a cut of beef that will be tender in the slow cooker:
– Slow cooking breaks down the muscle, so a cheap cut of meat is optimal. Look for the parts that get the most work (near the head & tail).
– Look for meat with lots of marbling. That connective tissue will make the meat moist & tender.
– Examples of cuts that meet these requirements are: shank, shoulder, chuck, round & rump. This image helps put cuts of beef into perspective.

Use your slow cooker for a twist on a traditional roast with this recipe for Mushroom Roast.
Instructions
Spray slow cooker with cooking spray.
Place roast in slow cooker.
Mix packet of soup mix with water, then pour mixture over roast.
Layer onions and mushrooms over roast.
