So I decided to try these yesterday for a breakfast that is quick, easy, and packed with nutritious and delicious flavors. And do you know what the best part is? I made enough for the whole week! A week full of breakfast done in 20 minutes…can’t beat that in my book!

Ingredients you need (will make 6 servings):

  • 6 Eggs
  • 6 slices Turkey Bacon
  • 1/2 cup Onion, chopped
  • 1/2 cup Red Peppers, chopped
  • 1 Tbsp Chives, chopped
  • 1/2 cup Cheddar Cheese, shredded

You guys know by now that I am a fan of cooking most of my meals on Sunday so I don’t have to do the work later. This is one of those that you can make in just a few minutes on the weekend and have breakfast ready for every day of the week.

Start by pre-heating the oven to 350 degrees. Next, get to chopping on those onions, peppers and chives. Have I ever mentioned how much I love chives?! Love. Them. They seem to add that extra punch to move a recipe from good to great.

Crack the eggs into a bowl and whisk until smooth. Pour the veggies into the egg mixture. You still with me?? Good, because we are ready for the bacon.

I like turkey bacon, but good ol’ regular bacon is fine too. Place the bacon around the edge of the muffin tin so it is standing up against the side. Now all you have to do is pour the egg mixture into each muffin cup, top with cheddar cheese, and place in the oven for 20 minutes.

 

 

You are ready to enjoy a nice egg muffin (Mc not included) every morning! I know I will enjoy my breakfast much more now…how about you???
