Crockpot Loaded Cauliflower

Cauliflower is a great substitute for SO many things such as pizza crust, rice, potatoes, etc. When I was a kid, my uncle used to make a twice baked potato casserole every year for Thanksgiving. He lives in Wyoming now so I thought, why not try replicating the recipe this year but substituting cauliflower for the potatoes. I am not going to lie, this recipe was not my favorite. However, it did not taste bad in anyway, I just felt like it was missing something. Maybe using fresh cauliflower rather than frozen, or different seasonings, etc would change my mind. However, I decided to go ahead and post this recipe for my cauliflower lovers. If any of you change up the recipe in any way, shape, or form, let me know in the comments :).
