Hey all you WeightWise-ers! I am refreshed and recharged after this weekend…how about you??? Besides painting part of my house this weekend (yep, it’s pretty now), I tried out some new recipes. I love to experiment in the kitchen, especially with the more uncommon vegetables….like eggplant.

Ingredients
- variety of raw veggies
- 1 cup low fat ricotta
- 1/2 cup low fat mozzarella cheese
- basil to taste
- 1 cup marinara sauce
- 1/2 cup lean ground turkey
- 1/2 cup Italian Sausage
- 1/2 cup Parmesan cheese
- 1 egg
- oregeno to taste
- salt and pepper to taste

Instructions
- First, preheat your broiler to the high setting.
- Start the eggplant by it lengthwise into about 1/4 in. slices. Sprinkle with salt and soak in water for about 15-20 minutes.
- In the meantime, place all ingredients for the sausage balls (the last 6 ingredients, in a bowl and mix with hands. Don't be afraid to get those hands dirty! Roll a portion of this mixture between your hands to form about 1 inch balls and place on a non-stick baking sheet.
- *Tip: you could also use a small ball scoop to make these*. Place these in your oven on 350 degrees for about 15-20 minutes.
- Let's get back to the eggplant. Pat the slices dry and place on broiling rack in a single layer. Spray with Pam and place about 3 inches under the heat source.
- Let the eggplant cook about 3 minutes, remove, flip each slice and return to the broiler for another 3 minutes.
- Once the eggplant is done (it should be soft and slightly browned), scoop a small amount of ricotta cheese on each slice. Sprinkle with mozzarella cheese and basil.
- Lastly you will roll the eggplant from the small (short) end toward the bigger end- like a jelly roll. Stick in the oven for 4-5 minutes or until cheese is melted. Serve with marinara sauce.
