After being on vacation for 6 days, the last thing I want to do is come home from work and cook. This is why I LOVE batch cooking. 1 night, 1 hour- meals for the next 4 days –sounds pretty awesome to me! Tried this amazing chicken recipe I found at goodlifeeats.com, a few slight modifications and BOOM the perfect healthy meal for anyone!

Ingredients
- 1 lb Chicken Breasts or tenderloins cut into strips
- 1 packet italian herb and garlic seasoning
- 1/2 cup water
- 2 teaspoons olive oil
- 1 yellow onioin diced
- 3 garlic cloves minced
- 16 ounce mushrooms sliced
- 2 Zuchinnis cut into bite size chunks
- 2/3 cup sun-dried tomatoes
- 2 15 ounce cans fire roasted diced tomatoes
- 1 tablespoon Italian seasoning
- salt and pepper to taste

Instructions
- Place chicken pieces into skillet, sprinkle italian seasoning packet, and add water. Cook chicken thoroughly on low heat; stirring occasionally.
- While the chicken is cooking, chop onions, zucchini, garlic and mushrooms (TIP: Save time and garlic fingers: buy pre-sliced mushrooms and minced garlic!)
- Once chicken is completely cooked, remove from skillet and set aside on a plate. Add olive oil to skillet, toss onions in skillet and sauté for 2-3 minutes (or until onions start to become clear)
- Then, add mushrooms and sauté onions and mushrooms for another 5 minutes. Add garlic, zucchini, and sun-dried tomatoes to vegetable mixture and sauté for another 2-3 minutes. Finally added diced tomatoes, Italian seasoning, and salt and pepper
- Place chicken back in skillet and cover with vegetable mixture. Wa-la batch cooking at its finest! So excited to enjoy this meal all week
