So I decided to try these yesterday for a breakfast that is quick, easy, and packed with nutritious and delicious flavors. And do you know what the best part is? I made enough for the whole week! A week full of breakfast done in 20 minutes…can’t beat that in my book!

- 6 eggs
- 6 slices bacon
- 1/2 cup onion chopped
- 1/2 cup Red Pepper chopped
- 1 tbsp chives chopped
- 1/2 cup cheddar cheese shredded

Instructions
- Start by pre-heating the oven to 350 degrees.
- Next, get to chopping on those onions, peppers and chives
- Crack the eggs into a bowl and whisk until smooth.
- Pour the veggies into the egg mixture.
- Place the bacon around the edge of the muffin tin so it is standing up against the side
- pour the egg mixture into each muffin cup
- top with cheddar cheese
- place in the oven for 20 minutes
