- 1 Eggplant sliced into 1/4 inch rings
- 1 cup marinara sauce
- 1 cup Lowfat Mozzarella Cheese

Instructions
- Slice the eggplant into 1/4 inch round disks and place on a baking sheet.
- Scoop about 1-2 tbsp of Marinara or pizza sauce onto each slice of eggplant.
- Choose your favorite toppings! I love these protein veggie crumbles made by Boca. Plus, if you have a vegetarian in the family or you just want to have a "meatless" night, they are perfect! I made a variety of pizza sliders...
- Use low fat mozzarella cheese on top of the sauce then start building your sliders! If you have kids this is a great way to get them involved helping with dinner...let them add their own topping! I used turkey pepperoni on a few of my sliders. One slider was a taco theme with cheddar cheese, veggie protein crumbles, tomato, and an onion ring. I also had a vegetarian Italian slider- mozzarella cheese, tomato slice, and olives. The possibilities are endless!
- After you are done with the toppings, just slide the baking sheet into a hot oven for 20 minutes.
