Eggplant Pizza Sliders
Slice the eggplant into 1/4 inch round disks and place on a baking sheet.
Scoop about 1-2 tbsp of Marinara or pizza sauce onto each slice of eggplant.

Use low fat mozzarella cheese on top of the sauce then start building your sliders! If you have kids this is a great way to get them involved helping with dinner...let them add their own topping! I used turkey pepperoni on a few of my sliders. One slider was a taco theme with cheddar cheese, veggie protein crumbles, tomato, and an onion ring. I also had a vegetarian Italian slider- mozzarella cheese, tomato slice, and olives. The possibilities are endless!
After you are done with the toppings, just slide the baking sheet into a hot oven for 20 minutes.
