Happy New Year everyone! I hope the beginning of 2021 has been good to each of you! Now new years resolutions are a thing for just about everyone. My tip is to make sure that your resolutions are small and attainable, which will help your resolution(s) develop into lifelong habits. For example, if you are wanting to start cooking more this year, maybe avoid hoping to cook 7 days a week in the beginning. Start off with 3 days a week for one month and then increase it to 4-5. That way you avoid overshooting your goal, becoming discouraged for not cooking everyday like you had hoped, and resorting back to old behaviors. Also, keep you meals exciting and occasionally try something new. Eating egg whites and chicken breast every single day can become boring for some. Adding in a new recipe a few times a month will help broaden your recipe book and keep you on track with your goals for 2021. With that said, check out this new recipe! I love a good stir fry recipe since I can cook everything in one pan! Minimum dishes during the work week… Yes please!

- 1 lb ground turkey or lean beef seasoned with salt and pepper
- 2 tablespoons minced garlic
- 1 bag frozen cauliflower rice
- 1/4-1/3 cup sliced sundried tomatoes, banana peppers, and kalamata olives *all are optional and quantity is based on your preference*
- 1/2 cup feta cheese
- 1-2 handfuls baby spinach leaves

- Brown your ground turkey with minced garlic.
- As the turkey is browning, slice your banana peppers, sun dried tomatoes, and olives.
- Add the cauliflower rice to the cooked ground turkey. Cook over medium heat for 5 minutes. Add the banana peppers, sun dried tomatoes, and olives to the pan and cook for an additional 5 minutes.
- Remove your pan from the heat and stir in the spinach leaves and feta cheese. Allow to cool and then ENJOY :).
