Thanksgiving is less than a week away! Before you know it, Christmas will be here. My most favorite part of family gatherings during the fall/winter season is PIE. It’s delicious. It’s too easy to eat more than one slice. This can add a lot of extra calories from fat and starch. So, today, I present to you the microwave baked apple. It tastes just like an apple pie and the best part? It takes 5 minutes to make!

- 1 each granny smith apple
- 1 packet splenda
- cool whip lite optional
- ground cinnamon

Instructions
- Wash and dry the apple, and then peel, core, and medium dice it.
- Place in a small microwave safe bowl. Pour a packet of Splenda over the apples. Sprinkle with cinnamon and add just a little water — it only takes a little!
- Cover, leaving a little room for air to escape, and microwave for 1 minute. Be careful when removing from the microwave, it will be hot! Check the softness of the apples and microwave more if needed.
- Once cooled a little, add a small spoonful of Cool Whip Lite and a sprinkle of cinnamon if you'd like. Enjoy!
