It seems like breakfast is the hardest meal of the day to get variety. While I’m an advocate of eating any proteins you want for breakfast, not everyone can bring themselves to eat a piece of chicken or a salmon filet first thing in the morning. I get it! Breakfast foods are breakfast foods. And that can get monotonous. But try out this recipe for Pepperoni Eggs…I promise it is nothing life shattering or ground breaking. But it might give you just enough pump to start loving your breakfast again.
I hope you might start thinking differently about breakfast…or at least begin to like it again with this recipe for Pepperoni Eggs.

- 2 eggs
- 1 oz shredded mozzarella cheese
- 10 Turkey Pepperoni
- 1 tsp olive oil or cooking spray
- 1 tbsp chopped olives if desired
- 2 slices jalapenos if desired
- 1 tbsp green bell peppers, chopped if desired

- Crack eggs into a bowl and break the yolks with a fork. Add salt and coarse black pepper as desired then transfer to a hot skillet coated in either cooking spray or olive oil.
- Swirl the pan until the eggs coat the bottom. Let cook for approximately 2 minutes or until eggs are set.
- Once the eggs have set, turn with a spatula. Add shredded or sliced low fat mozzarella cheese to the eggs. Reduce heat to low and cover skillet with lid until cheese melts.
- Add turkey pepperoni slices and other favorite pizza toppings. I love to add pepperoni, onions, and olives.
