Ingredients
- 1 lb Al Fresco Fully cooked Chicken Sausage
- 1 bag mini peppers halved
- 1 avocado
- 1/2 cup fresh cilantro
- 1 can diced tomatoes and green chilies
- 1 cup 2% shredded cheddar cheese

Instructions
- Preheat oven to broil on high.
- Slice length-wise down the sausage, then peel the casing off. Chop fresh cilantro.
- After removing casing, add sausage to a bowl. Mash/grind the meat using a beef masher.
- Slice avocado in half and remove pit. Add avocado without the peel to the bowl with sausage.
- Add can of diced tomatoes and green chilies and fresh cilantro to the bowl. Combine ingredients.
- Slice mini peppers in half length-wise and remove the seeds.
- Use a spoon to fill mini peppers with sausage mixture.
- Place stuffed mini peppers on non-stick baking sheet and sprinkle with 2% shredded cheese.
- Place under broiler for 5-7 minutes or until cheese is melted. Serve immediately.
