I know what you’re thinking… You’re wishing you had a Mexican style recipe to use with your ever-fabulous ramekins. Am I right?!

Well today is your lucky day my friends, because here I am with another recipe to help you get the most out of your perfect cookware! I present to you, Taco Cups.  – a protein packed, satisfying meal that will leave your taste buds singing!

The protein in this taco cup is coming from three sources: the ground beef, cheese, and Greek yogurt. With that combination, you will have no choice but to be energized and satisfied for hours after eating!

Instructions
  1. Preheat oven to 375 degrees and spray ramekins with cooking spray.
  2. Brown lean ground beef over medium-high heat. After cooked, drain the liquid from the skillet and add spices.

  3. Slice bell pepper and lay inside bottom of ramekin.

  4. Chop the onion and tomato.

  5. Combine ground beef, tomato, onion, and cheese.

  6. Fill ramekins with ground beef mixture and top with chopped bell pepper or jalapeno. Bake for 20-25 minutes.

  7. Top with shredded 2% cheese and small dollop of low fat sour cream (or plain greek yogurt for something higher in protein). Serve immediately.
