Cauliflower Fried Rice
While shopping at target the other day I found pre-chopped cauliflower! Talk about convenience.
You can purchase these cauliflower crumbles, or you can simply place cauliflower florets in a food processor and process it until it resembles rice. It’s actually very simple to “rice” the cauliflower in a food processor (and more cost effective) but this option is convenient and quick!

Cauliflower Fried Rice
A delicious low-carb fried rice using cauliflower instead of rice. This cauliflower fried rice recipe incorporates egg and a nice sesame- soy flavor!
Instructions
Chop up your carrots, garlic, and green onion.
Coat your pan with a small amount of sesame oil, and at medium heat, sauté the carrots, garlic, and green onion for a few minutes. The veggies should be bright in color and just tender.
Add cauliflower "rice" to the pan with your vegetables and sauté until the cauliflower begins to turn light brown.
At the point when the cauliflower is light brown, add in your low sodium soy sauce and continue cooking until the cauliflower is tender. Be careful to not allow the cauliflower to become too soft by over cooking at this point!
Once the cauliflower is tender and no longer crunchy, push the cauliflower "rice" to one side of the pan. Crack eggs into other side of pan.
Completely scramble the eggs on the side of the pan before you incorporate the eggs into the "rice". Make sure the eggs are small and will incorporate into the cauliflower fried rice well.
Incorporate the scrambled egg into the "rice"and stir until evenly mixed and hot all the way through. You can continue to chop the large chunk of eggs that you see at this point.
Serve hot a bowl and top with extra fresh green onion if desired.
