This is very similar to the Egg Muffin (without the Mc) recipe. However, I used Canadian bacon instead. These breakfast egg cups were super simply and prepped on Sunday for breakfast this week. They are perfect for busy workday mornings, since they just need to be popped into the microwave. They freeze well too :).

- 1 egg per muffin tin
- 1-2 slices canadian bacon per muffin tin
- shredded cheese optional
- cooking spray

Instructions
- Spray muffin tins with a little cooking spray.
- Place 1-2 slices of canadian bacon into each cup, and then crack an egg on top.
- Sprinkle some shredded cheese on top of each egg (optional).
- Bake at 350 degrees for 20-25 mins.
