Sheet Pan Shrimp Fajita Bowls

Easy, simple, and delicious! Three things that I look for when it comes to busy weeknight meals. You can make this with or with out the cauliflower rice. If you would like to keep the clean up to a minimum, you do not need to cook the cauliflower rice in a skillet after you steam it in the microwave. I just like mine crispy. This recipe could be made with chicken, steak, and/or pork as well. Just make sure whatever protein you choose to use, that it is cooked thoroughly. Hope you enjoy :).

Sheet Pan Shrimp Fajita Bowls
Instructions
  1. Mix together fajita seasoning (I used a package) with 1/3 cup of water. Add to thawed shrimp. Let shrimp marinade for one hour or overnight.
  2. Preheat oven to 400 degrees. Slice your bell peppers and onion.
  3. Mix the peppers and onions with the shrimp. Spread evenly on a sheet pan.
  4. Place sheet pan in the oven for 15 minutes.
  5. Serve over cauliflower rice, I typically crisp mine up in a skillet, and other toppings of your liking (ex. black beans, cheese, jalapenos, salsa, cilantro, etc).
